Packaging can assist in preventing damage, protect materials from contamination and physical damage, and affect a material's shelf life. This study aimed to determine the shelf life of bakasang paste packaged using two types of packaging and evaluated using the accelerated shelf-life testing (ASLT) method. Bakasang paste (terasi) was made from the innards of skipjack or cakalang (Katsuwonus pelamis). The parameters evaluated in this study were water content, free fatty acid (FFA), and thiobarbituric acid (TBA). Bakasang paste was packaged using aluminum foil and low-density polyethylene (LDPE) and stored at 30°C, 40°C and 50°C for 0, 7, 14, 21, 28 days. The results indicated that Bakasang paste packaged in aluminum foil and stored at a temperature of 30°C had a shelf life of 758 days. © 2023 Author(s).
